Strozzapreti with black cod and zucchini

IMG_0983I am sure you will love this pasta plate. You can use any fish you want, but this time I have a nice piece of black cod.

Ingredients:

  • a piece of black cod or any other fish you like, cut in cubes
  • 1 or 2 sliced zucchini
  • strozzapreti pasta (consider 80 gr a person), penne rigate are good too
  • a glass of white burgundy wine, chardonnay,  or any full body white wine
  • freshly ground 4 peppercorn mix
  • fresh garlic
  • extra-virgin olive oil
  • a good amount of minced parsley and a top for each plate

Start by putting water in a pot for the pasta. While the water is taking its time to get to boil, heat a pan with some extra-virgin olive oil and fresh garlic. Add the sliced zucchini and some freshly ground peppercorn, and have them cook for few minutes. The zucchini’s color starts to turn golden. Stir them occasionally. If in the meantime the water is boiling, add some salt and put the pasta in. Now you have 8 minutes for adding to the zucchini the fish cut in cubes, and the white wine. Stir them and let the wine cook the fish. Take your time but be sure to not over cook the fish. Now drain the pasta very aldente and add it to the pan. Put some fresh parsely and stir to amalgamate for a couple of minutes. Best is if the fish is still in his way to cook and some wine is still there so that the pasta absorbs those flavors as well.  When it’s ready serve it with some raw extra-virgin olive oil and a tip of parsely on top. I alway accompany the plate with a glass of the same wine I use for cooking, that’s why it needs to be a good wine!
